A brief on Chardonnay wines & its imported brands in India

Chardonnay is the king of white grapes as it is very versatile and can grow in all weather conditions.  Styles can range from a Bone-dry Chablis from cool climates, fruity and nutty Meursault from moderate climates or a tropical and unctuous hot climate Chardonnay from California. 
Chardonnay by itself is not a very aromatic grape variety and hence the wines undergo oak aging, malolactic fermentation and/or lees stirring. Oak gives it the toasty note, malo-lactic gives it a creamier, heavier mouth feel and lees stirring adds to the yeasty notes. It is the same kind of result as lees stirring, achieved on a grander scale in Champagne when it undergoes a secondary fermentation in the bottle and rested on the lees.
Key wine regions for Chardonnay
 The Chardonnay grown on the Cote d'Or in Burgundy, France is the most expressive of all chardonnays. They come in unoaked styles like Chablis to the Oaked styles like the Montrachet.  In California, Sonoma and the Central Coast to the south, where fog slows ripening, are capable of making great Chardonnays. They usually see a lot of enhancement techniques viz oak, malo etc. Chile too has similar ones due to similar climatic conditions. Oaking was a ritual in most Oz chardonnays, but now many producers are promoting un-oaked Chardonnay as they lay stress on the character of the grape.
 Chardonnay & Food pairing
Chardonnays from cooler climates have refreshing acidity and green fruits which are perfect as an aperitif with salads and fresh salty cheeses. The hot climate ones with moderate acidity, tropical fruit notes which are often accompanies by oak go well with white grilled meats, grilled haloumi, Melanzane Parmigiana etc.
